Watermelon Candy

For this candy, I have used freshly squeezed watermelon juice for making the inner red part and freshly squeezed chervil juice for the outer green part. You could use parsley or coriander leaves instead of chervil. I have not used any artificial colors because watermelon and chervil have such beautiful colors, I didn't want to undermine them and I wanted to keep it as healthy as possible for my daughter.
I thoroughly enjoyed making these candies and eating them. Hope you like it too.

Step 1: Ingredients

  1. Sugar - 2 cups
  2. Watermelon Juice - 1/2 cup
  3. Chervil Juice - 1/2 cup
    • Watermelon for the red central part.
    • Chervil for the outer green rind.
  4. Corn syrup - 3/4 cup
  5. White Sesame Seeds (for depicting white watermelon seeds)
  6. Flax Seeds (for depicting black watermelon seeds)
  7. Confectionery Sugar (for the mold)
  8. Cookie Sticks

Step 2: Making Candy Mold

Steps:
  1. Spread confectionery sugar in a large flat vessel.
  2. Make the bed of confectionery sugar as flat as possible.
  3. I used my daughter's toys to make impressions on the confectionery sugar bedding. You could use any round flat base object to do this.
  4. Spread the sesame seeds and flax seeds in the round impressions.
  5. Please perform the above steps before you start preparing the candy solution.

Step 3: Making Watermelon and Chervil Juice

Steps to make Watermelon juice:
  1. Cut slices of watermelon.
  2. Place the slices in a thin clean cloth.
  3. Squeeze the cloth and collect the juice in a container.
Steps to make Chervil juice:
  1. Wash the chervil and place the leaves in a blender and blend to a smooth paste.
  2. Add water if required.
  3. Transfer the smooth paste in a thin clean cloth.
  4. Squeeze the cloth and collect the juice in a container.

Step 4: Make the candy solution

Steps:
  1. Mix sugar, corn syrup and watermelon juice over medium low heat.
  2. Mix well and slowly bring to a boil.
  3. Keep mixing. Slowly it will start forming bubbles.
  4. I don't have a candy thermometer so I poured the mixture in cold water and when it forms stringy hard bubbles, then its done.
  5. For making chervil candy solution, use chervil juice instead of watermelon juice and repeat all the above steps.

Step 5: Pouring the candy solution in the mold and Final Presentation.

Steps:
  1. Once the candy solution is done, quicky pour the watermelon candy solution into the central smaller round impression in the mold.
  2. Immediately, place the candy sticks else the candy will set and the sticks wont stick to the solution.
  3. Pour the green chervil solution around the inner circle.
  4. Allow candies to cool at room temperature.
  5. Once cooled, dust off the extra sugar on the back of the candy and enjoy.
  6. If you have extra candy solution, you could pour into greased muffin tray.
The Watermelon Chervil Candy is now ready. Enjoy!
