Roasted Bell Pepper Marmalade

This recipe is my sister's contribution. Thanks to her.
She says "The other day, our local grocery store was selling fresh organic mini peppers. My friend and I bought a big lot and I made a few recipes. But some more were left out and so thought of making the roasted pepper marmalade. Its so easy to make and so yummy. I am sure you and your kids will love it. Hope you like it."

Ingredients for making Marmalade:
  1. Red Bell Pepper - 2 Big Size or 15-20 mini peppers. I used the mini peppers.
  2. Apple - 1 big size
  3. Sugar - 1/4 Cup
  4. Honey - 1 Cup (Adjust as per sweetness requirement)
  5. Lemon Zest - from 1 medium size lemon
  6. Lemon Juice - 4 Tsp
  7. Black Pepper Powder - 1/2 Tsp
Preparation Steps:
  1. Roast the peppers in oven.
    • Preheat oven to 450 degree F.
    • Line the peppers on a greased oven safe vessel.Bake for 10mins on each side.
    • Remove from oven and let it cool.
  2. Wash the apple and grate it.
  3. Add lemon juice and mix so apples don't discolor.
  4. Remove the skin of the roasted peppers.
  5. Chop half of them into tiny pieces and blend the rest to a fine paste.
  6. Heat a pan containing sugar and honey.
  7. When it starts bubbling, add the grated apple, chopped and blended peppers and mix well.
  8. Let it cook for about 10mins.
  9. Add the lemon zest and black pepper powder and cook till its nicely done.
  10. Taste it and add more honey if required.
  11. Turn off the stove and allow it to cool down completely before adding it to the pie crust.
  12. The Roasted Bell Pepper Marmalade is ready.
  13. You could serve this marmalade along with crackers and cheese for a yummy snack.
  14. You could use this marmalade with bread or chips etc as well.

The other day one friend came home and she got me a packet of frozen McCain potato smiley and my daughter loved it. So, I thought of making it a little healthier by baking and using sweet potatoes. Believe me, its so easy to make and is a guilt free snack that we can munch on and ofcourse its so much cheaper when we make it. Please try it and hope you like it. Thank you.

Roasted Mashed Sweet Potato for babies

Sweet Potato is very healthy for kids. You could either boil them or bake them. I found baking more healthy because there was no way you would lose any nutrients. Post 6months of age, I introduced this to my daughter. She didn't really like the taste of sweet potatoes though so I used to make this once in a while only. After she started teething, I started including it in parathas so she never realised the presence of sweet potatoes :)
