DelMonte is a very well known brand and they sell a wide range of food products like different types of canned fruits and a wide variety of pastas. I received a sample pack of DelMonte Penne Pasta and I decided to make a very healthy and colorful pasta salad. This is a dish which is very close to me because I started making it from my daughter's first birthday party and it's always been a hit in all my get togethers. I usually serve it with corn chips and it gets over in no time. I usually use different pretty shaped pastas for this but today I decided to use the Penne Pasta. Hope you like it.

My daughter just loves the word "muffin" and the look of it and the smell of it as well. She loves this word because of the "muffin man" rhyme. She does not like to eat it that much yet though. She is 2.5 years old now. However , to my surprise she liked these muffins. She hated the chunks of pecans but liked the muffin as such. So from next time onwards, I thought of making them so there are no chunks to bite into. My husband loved it too. There was left over batter which I poured into bread pan and it came out great too. It looked like bread but it was a banana bread. Absolutely fantastic. Must try.

One day, I made quinoa pizza bites and daughter loved just the quinoa pizza base without any toppings. I was glad she liked that. This Nutty Flaxseed Energy Bites are indeed an extremely healthy energy bite for kids and for adults as well. I have used peanut butter and honey instead of sugar. I have also used flaxseed, nuts and cardamom. You could anything available in your kitchen and make these energy bites for your kids. If your child eats one bite per day, it will be a great addition to their health. 

Initially, my daughter didn't like it because the flaxseed seem to over-power but after a few weeks, she did seem to like it. So please do try it and let me know your experiences. Thank you for reading.

Roasted Bell Pepper Marmalade

This recipe is my sister's contribution. Thanks to her.
She says "The other day, our local grocery store was selling fresh organic mini peppers. My friend and I bought a big lot and I made a few recipes. But some more were left out and so thought of making the roasted pepper marmalade. Its so easy to make and so yummy. I am sure you and your kids will love it. Hope you like it."

Ingredients for making Marmalade:
  1. Red Bell Pepper - 2 Big Size or 15-20 mini peppers. I used the mini peppers.
  2. Apple - 1 big size
  3. Sugar - 1/4 Cup
  4. Honey - 1 Cup (Adjust as per sweetness requirement)
  5. Lemon Zest - from 1 medium size lemon
  6. Lemon Juice - 4 Tsp
  7. Black Pepper Powder - 1/2 Tsp
Preparation Steps:
  1. Roast the peppers in oven.
    • Preheat oven to 450 degree F.
    • Line the peppers on a greased oven safe vessel.Bake for 10mins on each side.
    • Remove from oven and let it cool.
  2. Wash the apple and grate it.
  3. Add lemon juice and mix so apples don't discolor.
  4. Remove the skin of the roasted peppers.
  5. Chop half of them into tiny pieces and blend the rest to a fine paste.
  6. Heat a pan containing sugar and honey.
  7. When it starts bubbling, add the grated apple, chopped and blended peppers and mix well.
  8. Let it cook for about 10mins.
  9. Add the lemon zest and black pepper powder and cook till its nicely done.
  10. Taste it and add more honey if required.
  11. Turn off the stove and allow it to cool down completely before adding it to the pie crust.
  12. The Roasted Bell Pepper Marmalade is ready.
  13. You could serve this marmalade along with crackers and cheese for a yummy snack.
  14. You could use this marmalade with bread or chips etc as well.

The other day one friend came home and she got me a packet of frozen McCain potato smiley and my daughter loved it. So, I thought of making it a little healthier by baking and using sweet potatoes. Homemade Baked Crispy Kale Chips for Kids

Kale is an extremely healthy green leafy vegetable. It is high in Vitamin C and calcium along with others. To my knowledge it is the only leafy vegetable that can be baked in the oven and still be super crispy. So, I figured, the best way to make my daughter eat Kale is to make chips out of it. It is so easy to make this recipe, I can't stress enough. Please try this and hope your kids love it too.
