Ingredients:
- Potato - 2 Medium Size
- Sour Cream - 1 Cup
- Cilantro - 1/2 Cup chopped
- Red Pepper - 1/4 Cup (Finely Chopped)
- Corn - 1/4 Cup
- Salt - to taste
- Pepper - to taste
- Oil - 1 tsp
- Preheat the oven to 400 degree F.
- Wash the potatoes and pat dry with a tissue.
- Poke around the potato with a fork
- Rub oil all around the potato.
- Wrap it in aluminium foil.
- Bake at 410 degree F for about 50mins or until when you poke a fork, it goes through the potato easily.
- Once done, take it out of the oven and let it cool.
- Cut the potato into half. Use a spoon and scoop out the baked potato without breaking the outer potato shell. It will now look like a potato shell with the skin and without the inside flesh.
- Mix corn and finely chopped cilantro, pepper, pepper, salt, sour cream and the scooped out potato.
- Fill this mixture inside the potato shells and spread cheese on top.
- Bake again at 410 degree F until the cheese melts.
- It goes great with mustard sauce. Enjoy!
