Mixed Vegetable Soup

Ingredients:


  1. Red Bell Pepper - 1/2 Cup
  2. Carrot (chopped) - 1/2 Cup
  3. Beans (chopped) - 1/2 Cup
  4. Onions (chopped) - 1/4 Cup
  5. Tomatoes (chopped) - 1/4 Cup
  6. Spinach (chopped) - 1 Cup
  7. Cashews - 10
  8. Almonds - 10
  9. Butter - 2 tbsp
  10. Garlic - 3 pods
  11. Milk - 2 Cups
  12. Salt - to taste
  13. Black pepper powder - as per taste
  14. Mixed Italian seasoning or cumin seeds (optional)
  15. Water - 3 Cups (or depends on your desired soup consistency).
Preparation Steps:


  1. Add the chopped vegetables, cumin seeds (optional), almonds/walnuts/cashews, garlic, onion, tomatoes and water sufficient to cover the vegetables in the pan until its soft. 
  2. Once cooked, remove pan from the heat and allow it to cool to room temperature.
  3. If you use almonds, De-skin them at this point if you wish. Since it is cooked, its easy to de-skin the almonds. This is optional. I didn't remove the skin.
  4. Grind the above contents to a smooth silky mixture.
  5. Pour the above mixture in a pan along with butter, milk and salt and cook till it comes to one boil. Turn off the heat and add the mixed Italian seasoning.
  6. Add black pepper powder and serve the soup hot. Adjust the salt if required. You could sprinkle some cheese on top if you like.
  7. Enjoy the super tasty and super healthy mixed vegetable soup :)
