Ingredients:
- Cauliflower florets - 4 Cups
- Onions (chopped) - 1/2 Cup
- Almonds / Walnuts - handful
- Garlic - 4 pods
- Butter - 2 tbsp
- Sunflower oil - 1 tsp
- Green chilly - 1 (optional)
- Milk - 2 Cups
- Salt - to taste
- Black pepper powder - to taste
- Mixed Italian seasoning or cumin seeds (optional)
- Water - 3 Cups (or depends on your desired soup consistency).
- Heat Oil in a pan.
- Add chopped onions and cook until it turns pink but not brown. Don't overlook or burn the onions else it will taste bitter and will discolor the soup.
- Add chopped cauliflower florets , green chilly (optional) , garlic, cumin seeds (optional), almonds/walnuts and water sufficient to cover the cauliflower in the pan and cook until the cauliflower is soft and fully cooked.
- Once cooked, remove pan from the heat and allow it to cool to room temperature.

- Grind the above contents to a smooth silky mixture.
- Pour the above mixture in a pan along with butter, milk and salt and cook till it comes to a boil. Turn off the heat and add the mixed Italian seasoning.
- Add black pepper powder and serve the soup hot. Adjust the salt if required. You could sprinkle some cheese on top if you like.

Please note:
- If you don't prefer spicy, avoid the green chilly.
- Don't over cook or burn the onions.
- You could use blanched and de-skinned almonds and grind directly with the cooked cauliflower .
