Under The Sea Themed Eggless White Forest Lemon Cake.

My daughter turned 2 years old last week. She loves sea creatures so I decided to make her an UNDER THE SEA themed cake. I made an Eggless 2 TIER WHITE FOREST LEMON CAKE with 2 layers on each tier with blue colored frosting in-between the layers and marshmallow fondant on top. I tried to make all the sea creatures my little one loves like the sea turtle, octopus, star fish and some tiny fishes. I also made some sea weeds as well to give it a more authentic look. It took me about 14 hours to make it because I am just in the learning phase but all this effort was totally worth-ed for me. I had tears in my eyes with the final outcome. My daughter loved it. She started name calling all the sea creatures on the cake and was so excited. My husband loved it too and the birthday party was a great great hit. It was absolutely a great achievement for me which I will cherish my whole life.

There was a potluck get together in my daughter's play school today for Christmas and I was thinking what to make. I wanted to make a something which is healthier. I usually make coconut ice at home but since I was thinking of an healthier option, I thought of adding apples to this dish.
Apple Coconut Ice is an extremely healthy dessert especially for kids. It has lots of fresh apple and coconut, hence great for their tiffin/ snack as well. This can be a great dessert in get togethers as well. Coconut Ice is popularly known as Coconut Barfi in India. Hope you like it.

My daughter (23 months old) was having vomitting problem and she was not eating anything well. So, I made this pudding for her. Usually, milk is not given when kids vomit but my daughter was eating absolutely nothing so I was forced to make this and thank God she drank the milk in this pudding minus the tapioca pearls and her stomach accepted it.

Jowar/Sorghum is a staple food in India. It is used in gluten free baking. It is used to make flat-breads which is very famous as Jowar Roti in India. We can make pancakes, porridge, cakes etc with Sorghum flour. Sorghum flour is a powerhouse of nutrients. It is high in iron, protein and dietary fiber. Hence, I use this in my cooking. I make various kinds of cookies with different flours for my toddler so she gets all the nutrients possible.
I have also used natural gum which is a fantastic ingredient for our health and great especially during winters because it helps build resistance to cold.

Ingredients:
  1. Basic Crepe/Dosa Batter
  2. Chocolate sauce
  3. Butter- as much as you wish. More the better.
Method:
  1. Almost same as Veggie Schezwan Butter Dosa. The only difference is , instead of the veggies, spread chocolate sauce and butter on the top layer of the crepe/dosa.
  2. Fold it in desired shape and drizzle some more chocolate sauce on top.

I wanted to make a dessert for my toddler so kept thinking what to make and found some fresh raspberries in the market. So, I decided to make the Eggless Raspberry Tartlets. I chose tartlest instead of pie because I wanted my toddler to be able to hold it in her own hands and eat. This is a very healthy dessert for kids as well because we have used milk, cream cheese, butter and fresh raspberries. It came out so nice. Yesterday, two girl friends came home for the first time with their toddler girls. Their girls are almost the same age as mine. Inorder to make the kids get closer, one girl friend asked her daughter to hug and kiss the other kid. I thought it was sweet but there is an important learning here which the second girlfriend taught us.

Second Girlfriend asked first girlfriend "Would you ask your baby girl to kiss even if it was a boy instead of a girl?".

First girlfriend immediately said "NO. Then I am teaching her something wrong."

Second Girlfriend said "Then why are you asking your baby girl to kiss another baby girl? Kids don't understand gender at this tender age. If we ask them to kiss another person now, they will think it is the right thing to do and will do the same with all. So, it is important to advice them generically irrespective of genders. We should instruct our baby girls from a young age not to kiss anybody or allow them to touch them on their bare body".

This was such an eye opener for us (new moms). Hence, I thought of updating this in my blog so it helps other mom's.

Remedy for Common Cold in Kids - Turmeric and Black Pepper Flavoured Milk

Common Cold is very common among kids. I try my best to avoid store bought medicines and find turmeric as a great natural product for fighting common cold. Like my parents used to do with me, I mix turmeric, black pepper in milk and give my toddler. She does not like sweet so I don't add sugar/honey. You could add honey because honey is great for common cold.

Mango is a very nutritious fruit and fatty too, hence great for kids. Whenever mangoes were available, I used to make mango puree and give my daughter. I started giving this to her post 6 months of age. I have also used this with yogurt and gave her as mango flavoured yogurt. Ghee is also known as Clarified Butter. It is made by melting butter and allowing the milk components to separate and hence the name. Solving board puzzles is such a wonderful activity for toddlers. My daughter just loves it. When she started, she struggled but within 3 days of using it, she could place the puzzles into their respective slots to a much much better extent. 
This game provides a great deal of work to the brain because the kid has to decide which shape goes into which place, they have to move the puzzle pieces so it sits exactly inside the slot etc. Awesome game. I would highly recommend it to all kids.

So i asked her to help me with some prep work towards making this tart. I taught her how to place the muffin liners and to place the tart shell mixture in the liners and she seemed pretty interested and with great concentration she did it!

Dhokla for kids

Dhokla is a vegetarian food item that originates from the Indian state of Gujarat. It is made with a batter prepared from chickpea flour. It is a great snack which is enjoyed by most parts of India. It is also a street food. It is extremely spongy like a sponge cake but its a savory dish. It can be served with mint chutney/ketch up. Its very easy to make and a great healthy snack for kids and elders. I can call it a guilt free snack. It is prepared by steaming but can be prepared in a microwave as well. I have included both methods in this instructable.  

My daughter is 22 months old now and she didn't seem to like it that much but am sure she will love it as she grows up. My husband just loves it :-)

Separating leaves from the stem of herbs - kid's activity.

I had grown fenugreek /methi leaves in my vegetable garden. When it had grown enough, I uprooted them for cooking. I had to separate the leaves from the stem so I thought of engaging my daughter in this activity. She had lot of fun. She sat glued to one place for 20mins which was just awesome. I could see she was concentrating on one activity. She was observing the leaves, the stem. She did pull off the leaves as I was teaching her but she was doing her stuff also :-) But just a great activity.

Watering Plants - Kids Activity

I love gardening and I am very interested in vegetable garden. I never miss to plant cilantro, fenugreek and mint every summer. With an attempt to keep my daughter occupied, I asked her to sow the seeds, then cover it with mud and then start watering them. To my surprise, she just loved doing that. So, I made her water the plants everyday and she never said NO to it.

Such activities help kids concentrate on one object. When they take water in a cup to water the pots, they give work to their brain - how much water should I use? which pot should I water first? did this pot get enough water? I should now move on to the next pot? Did I water all the pots? The leaves look so beautiful. Look at the shape, the color, the feel etc etc. They also learn that plants are living things and water is their food. They start learning so much even before starting school.

I found that this is a great activity for kids and I request you to try it with your friends. Please do share your experiences.

Playing with dough, making shapes - Activity for kids

Whenever I knead the dough, I roll out a small ball and give it to my daughter along with her tiny toys of varied shapes. She uses them as cookie cutters and makes shapes on the rolled out dough and enjoys herself.

She just started learning shapes. Today, as she was making those shapes, she was telling CIRCLE, SQUARE etc... I was so so so happy to hear that. It felt like a big accomplishment!

Rolling the dough - Activity for kids.

Once I knead the dough, I give a small ball of dough to my daughter. She then tries to imitate the way I roll it out to make chapatis. Over the past few months, she seems to have got so much better at rolling out dough. I was amazed to see her handle the rolling pin and was extremely happy too.
